Chicken biryani

Biryani is a flavorful and aromatic rice dish that is popular in South Asian cuisine, particularly in India, Pakistan, and Bangladesh. The dish is typically made by cooking basmati rice with a variety of spices, herbs, and meat (such as chicken, lamb, or beef) or vegetables.
Biryani is traditionally prepared by layering rice and meat in a large pot and cooking it on low heat until the rice is tender and the meat is fully cooked. Some variations also include fried onions, boiled eggs, and nuts like cashews or almonds. The spices used in biryani vary depending on the region and personal preferences, but commonly include cumin, coriander, cardamom, cinnamon, cloves, and bay leaves.
Biryani is often served with raita, a yogurt-based side dish that helps to balance out the spiciness of the rice. It is a popular dish for special occasions, such as weddings and festivals, but can also be enjoyed as a hearty meal on its own.

Ingredients:

• 2 cups basmati rice
• 2 lbs chicken, cut into small pieces
• 1 onion, sliced
• 1 tablespoon ginger paste
• 1 tablespoon garlic paste
• 1 teaspoon cumin seeds
• 4 cloves
• 4 green cardamom pods
• 1 cinnamon stick
• 2 bay leaves
• 1 teaspoon turmeric powder
• 1 teaspoon red chili powder
• 1 teaspoon coriander powder
• 1/2 teaspoon garam masala powder
• Salt to taste
• 4 cups water
• 1/2 cup chopped cilantro leaves
• 1/2 cup fried onions (optional)
• 1/4 cup ghee or vegetable oil

Instructions:

1. Rinse the rice in cold water and soak it in water for 30 minutes.
2. Heat ghee or vegetable oil in a large pot or Dutch oven over medium-high heat. Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaves. Cook until fragrant, about 1-2 minutes.
3. Add sliced onions and cook until golden brown, about 5-7 minutes.
4. Add chicken pieces, ginger paste, and garlic paste. Cook until the chicken is browned on all sides, about 5-7 minutes.
5. Add turmeric powder, red chili powder, coriander powder, garam masala powder, and salt to taste. Mix well and cook for 5 minutes.
6. Drain the soaked rice and add it to the pot. Mix well and cook for 2-3 minutes.
7. Add 4 cups of water to the pot and bring to a boil. Reduce heat to low and cover the pot with a tight-fitting lid.
8. Cook for 20-25 minutes, or until the rice is tender and the water has been absorbed.
9. Turn off the heat and let the biryani rest for 10-15 minutes.
10.Garnish with chopped cilantro leaves and fried onions (optional) before serving. Serve with raita on the side.
